Baked Stuffed Mushrooms


6 large mushrooms

8 anchovy fillets, chopped

2 spring onions

250g tub cottage or ricotta cheese

3 tsp lemon juice

½ tsp grated lemon zest

1 stick celery, finely chopped

½ cup chopped walnuts

Salt and pepper

For the topping: ½ cup bread crumbs and ½ cup grated cheese

Paprika and parsley for garnish


Preheat oven to 200c

Remove stems from mushrooms and place the mushrooms, skin side down on a lined oven tray.  Chop mushroom stems and combine with all other filling ingredients.

Mix together bread crumbs and grated cheese and spoon onto filled mushrooms.

Cook for aprox. 30min or until tops are golden brown.

Garnish with chopped parsley and a sprinkle of paprika.
